Peaches and Cream Italian Sodas

Last week at Bunco, my friend Kristen served all of us lucky ladies Strawberry Italian Sodas. Man, they were so good and they really hit the spot for me. I have had a bottle of Torani Peach Syrup sitting in my pantry for a few months now and after I had Kristen’s Italian Soda, I had to break it out.

My family loved the Peaches & Cream Italian Sodas. It was the perfect refreshing drink on a hot summer day!

I can’t wait to try more flavors of Torani Syrup in my Italian Sodas!

Creamy Grape and Yogurt Salad

Alright friends, I have a very quick and easy recipe for you today. In fact I almost feel a little guilty calling it a recipe because there are only two ingredients. But it is sooo good that I have to share it with you!

This recipe was inspired by a similar salad my sister-n-law Jill makes. I always thought that her recipe had vanilla yogurt until one day she told me that her recipe has cream cheese and marshmallow cream.

My kids love this salad and yours will too! You can eat it for breakfast, lunch, or dinner. Heck, you can even eat it as a snack in between meals if you feel the need. It is pretty healthy too. So you won’t feel so guilty eating it or feeding it to your family. If you want, you can use Greek yogurt. I am not a fan of Greek yogurt so I always use low-fat vanilla yogurt.

What I Love Wednesday

I was lucky enough to inherit these vintage patio chairs. They might have been a little “under the weather” when I got them, but I knew that with a little love, these babies would be as good as new.

I sanded as much of the chipping paint as I could with some steel wool. It seemed to work pretty good. I couldn’t get all of the old paint off but the steel wool made it a clean even surface.

Herb Parmesan Roasted Red Potatoes

When I worked in the catering department at a large software company, these roasted red potatoes were one of our most requested side dish. The secret to getting the crispy outer layer on the potatoes is to charboil them before you roast them.

Gluten-Free Zucchini Rice Bake

My birthday is a day after my Great Aunt Nellie. When I was a kid, she would bring a cake to me on my birthday and we would celebrate our birthday together. She always had a way of making me feel special. She had so much energy and was so much fun to be around!

She had moved here from Arkansas after her husband passed away. In the move, she lost all of her cookbooks. So she started making up recipes. One night when we went to visit her, she insisted on feeding my family dinner before we left. She made a casserole with zucchini, yellow squash, cheese, and stuffing. When we asked her for the recipe, she laughed and said she didn’t have one. It was just something she threw together with what she had in the fridge.

I have tried to replicate my sweet Aunt Nellie’s casserole over the years. I think this recipe is pretty close to it. This time of year, we always have an over abundance of squash from our garden. This recipe is a great way to use them up.

*For a gluten free Zucchini Rice Bake use gluten free stuffing or omit the stuffing.

Crispy Baked Zucchini Sticks

Need more zucchini recipes or more vegetarian recipes? I make these every summer and fall when my garden is overflowing with zucchini. They make a great appetizer or as a healthy side dish to any meal.  I love that they are just as flavorful and crispy baked as they are fried! You have got to check out easy these babies are to make!

When I was little, I use to love to go to Fryer Tucks in the mall and get some hot fried zucchini with a side of ranch dressing. When Fryer Tucks closed, my mom and I figured out how to make our own fried zucchini at home.

S’more Cookies

S'More Cookies-These cookies are the easiest and yummiest cookies you will ever try! They are soft, chewy, and stuffed with chocolate and marshmallows. Don't mess with the campfire s'mores, they just make a big mess. Every time I make these cookies I get asked for the recipe, because everybody loves them!

If you love s’mores, raise your hand. If you wish you could have s’mores year round, raise your hand.

My family loves to camp.  According to my kids, our camping trips are not complete until we bust out the graham crackers, Hershey chocolate bars, and marshmallows.

Roasted Butternut Squash with Apple Cider Glaze makes an easy and delicious side dish for any meal. As soon as they come out of the oven I am tempted to start eating them. Anytime I make them for a party I get asked for the recipe. Serve them as a side for you Thanksgiving, Christmas, or Easter dinner for an unforgettable meal that everybody will love.

I am in love with butternut squash! I love the taste, the texture, and the color. When I was making this recipe, my kitchen smelled heavenly!

There is just something about the smell of apples and cinnamon that remind me of Fall time. But there is no need to wait until Fall to make this squash.

One Pan Lemon Chicken Pasta with Tomatoes

I knew I had to try it as soon as I saw it. The fact that it you can cook it in under 20 minutes and only use one pan was a sure sell for me!
