5 Ingredient Cheesy Ham and Potato Soup

I love this recipe especially on cold hectic days. It’s quick to whip up so on crazy days you can have dinner in no time. To make life even easier, I’ve included the crock pot version. This recipe is really easy to double when you are feeding a larger crowd. I always get compliments when I take this soup to parties. One added bonus about this recipe is that all my kids will eat it too. I always use the O’Brien hash browns because it has the onions and peppers in it but if your family doesn’t like onions and peppers, just use the regular hash browns. I also use freshly grated cheese. I don’t recommend using the pre-shredded cheese in a bag because it doesn’t seem to melt very well.  An immersion blender is the best tool to use when you are making soups or sauces! What I love Wednesdays

I thought I would dedicate my Wednesday posts to sharing with you all things that I love. I will be sharing anything and everything that I think that you might find useful or possibly love as much as I do. I have a bazillion different things that I think you might find useful. Please feel free to share with me the things that you love as well. So, lets begin.

I love my immersion blender. It is a hand held mixer that you immerse into a pot of soup, sauce, or what ever you need to blend. Then you just push the little button and whala your food is all blended up nice and pretty. So instead of ladling your soup or sauce into a blender or food processor and having it drip all down the sides of both the pot and the appliance, just use the hand held mixer.  A bonus is that you won’t have as many dishes to clean.

The little blender tip unscrews for easy clean up. I’m serious, you are going to think you have died and gone to kitchen appliance heaven! The price range is between $20 to $40 give or take a little. You can find them anywhere from Walmart to Bed Bath and Beyond. Most of the big Kitchen brands manufacture them as well. I always find myself in the kitchen making soups when the weather starts cooling down and the immersion blender makes it all that much eaiser to do that!  If you don’t have one, take my word for it, you need one! So go and get one and you will be thankful you did. I am not kidding, go now! Just kidding, you can at least wait until morning.

5 Ingredient Pumpkin Cookies

Pumpkin cookies and fall are a match made in heaven! I love pumpkin cookies and the more chocolate chips the better! But I always hated making them. Maybe I am wrong, but it always seemed like it took a million and a half ingredients to make them and then it made so many that I had them coming out my ears. So I very rarely made them. I just depended on my sister, Stephanie to make them for me. She would always make them when we had family gatherings and she became known as the pumpkin cookie queen in our family. Well that all changed for me about three years ago.

First of all, let me tell you that I like to make all my food from scratch. I never use mixes, canned soup, or anything else like that in my recipes. I just like the way that the food tastes when it is made from scratch. Now that being said, I do have three desserts that call for some sort of mix in the recipe. It basically comes down to  the fact that it would not taste the same without the mix  and I just figured, if you can’t beat them… join them. This, as I am sure you have already guessed, is one of the three recipes.

My cousin Erin made these pumpkin cookies for a party she was hosting and they tasted just like the cookies that my sister always made, but these took a lot less time and they made the perfect quantity too. So I asked her for the recipe and I have been making them ever since.

So, my friends, I am challenging you to do the same. I dare you to try this recipe and not fall in love with the intense flavor and the speedy process as well. I am willing to bet that you will do the same as I did and throw away that old recipe and add this one to the family cookbook!

Honey-Dill Carrots

We just got back from a visit to my sisters house in Henderson, Nevada (next to Las Vegas). My sister was so very kind to show us some awesome shopping spots. And even though we spent many dedicated hours in finding the best deals, I don’t think we even made a dent in the shopping down there. But we made some great memories and ate a lot of freakin’ yummy food! Yesterday we made the long cactus infested drive home. And along the way we had to stop at a fast food joint to fill our bellies. I don’t know about you, but every time I get back from a vacation I am so burnt out on eating out that I just want to eat healthy home cooked meals for  awhile. So, I thought I would share with the rest of you some of my faves. I am not sure where I got this recipe. So I can’t give credit where credit is due. But regardless, it is a good one.

I like this carrot recipe because it is quick to throw together. And the dill gives it a different twist on your typical sweetened carrot recipe. It is a great side to any meat and would make a perfect Thanksgiving veggie. I hope you enjoy it.

Grilled Chicken and Orange Salad with Orange Vinaigrette

I love fall! Every time fall comes around I get the baking itch. I know you know what I am talking about. This weekend I spent most of the weekend baking treats. We had a few family parties and I also took some treats to the neighbors. I might have had a few treats as well.  But, this morning when I got up and stepped onto my very unforgiving scale…let’s just say I went for a run.

This salad is perfect if you have fallen into the same funk that I have. It is light and refreshing and yet flavorful and satisfying at the same time. I think the orange vinaigrette adds a fun new pop of flavor.

So go ahead and eat some fall treats. But make this salad for dinner and enjoy this wonderful season with a little less guilt!

The dreaded P.E.C

I know you have all had an encounter with a P.E.C member. Some of you might deal with it on a daily basis. Others might be lucky enough to only have to deal with it every once in a while. And sadly, there might even be a few of you who you or your spouse are a member.

What is P.E.C you ask? P.E.C stands for, “Picky Eaters Club”. Every household has its own processes and routines for meals. In addition, each household member can differ from each other as far as what they will eat. Some households only have a few members while others might have a household full of card carrying members. No matter how may members you have in your home it is a very frustrating thing to deal with.

You might be wondering how you can tell if you have a P.E.C member in your home. Well, this can be a very tricky thing to identify. Because, they look just like the rest of us. The only real way to tell if you have a P.E.C member in your home is to feed them. If they refuse to eat, cry, throw themselves on the floor, or anything else that is not normal eating behavior. It is probably safe to say that indeed you do have a member in your house.

We were lucky with our first child. She ate pretty much anything that we fed her. Our second child started out good. He ate very well when he was a baby. However, over time he changed. I don’t know who introduced him to the club but by the time he was four he was a full fledge member.

My next two boys where a lot like my second child. They ate very well when they were babies but as they got older they too joined the club.

Now, my youngest is a totally different story. He is the President of the P.E.C at our house. And sadly to say, he is only eighteen months.

P.E.C members have different ways of reacting to the food placed before them. Our members have gone as far as throwing themselves on the floor and screaming to a full-on eating strike. To make matters worse, you never know when they are going to strike. There have been times at our house when I was making a meal that I thought everybody was going to like it because the last time I had made the same meal all of the members seemed to be happy with it. And then out of the blue, they decide that it is no longer something that they will consume. I have a P.E.C member at my house who will not eat any veggies. The only dairy product he will eat is string cheese (he won’t even eat ice cream). The only fruit he will eat is an apple. If I let him he would live off of chicken nuggets, chips, Little Caesars bread sticks, chips, Ritz crackers, and did I mention chips. Next, there is our president of the club who will be perfectly happy eating something one minute and then he’ll throw it on the ground and will scream for something else.

What is the proper way of dealing with a P.E.C member you ask? Well my husband and I have tried many different approaches to this matter. Some methods have worked for a little while and others have failed miserably! We have tried sending them to their room, making them go to bed early, setting a timer, and grounding them. I am even embarrassed to say that there have been times that we have just had one of those days and the last thing we wanted was to have to deal with their fits so we gave in and let them eat something else. I promise you this doesn’t work. If anything it just makes the problem worse. Because it shows them that you have a breaking point and they know that if they  push you far enough, they will get their way.

Lately my husband and I have decided that we are sick of playing their games. So we adopted the “We do not negotiate with P.E.C members” policy. Believe me it is very hard at first. There was a lot of crying and tantrum throwing but after a while, when they realized that we meant business they have started coming around. Now, granted my youngest is only eighteen months so he is a little bit harder to reason with. But even my pediatrician said that this was the approach we were going to have to take if we ever wanted them to get better.

It has been really rewarding to see the P.E.C members at my house discover that the food that they thought was disgusting before really is good. If they just try it, 98% of the time they really will like it. I understand that there are things that they will not like but they have to at least try it.

Another thing I would suggest is that you make sure that you and your spouse are on the same page with how you are going to approach this. Because if one of you is ready to go ahead with the no negotiating policy and the other is still sitting on the fence. Trust me when I say “it will never work”.

To all of my fellow foodies out there who are living with P.E.C members in their home. I just want to say…hang in there. It can be so frustrating and there might be times that you want to just give up. But remember, you need to stay strong and show them who is boss.

Breakfast Casserole

Normally I do not make casseroles. I just have never been a big fan of them. But, this is one casserole that I make an exception for.  I make this casserole every year for Christmas breakfast. I prepare it the night before and put it in the fridge. Before we open presents, I put the casserole in the oven.  By the time we are done opening presents, badda bing, breakfast is done!  This casserole covers your main breakfast categories. It has the eggs, hash-browns, ham, and of course “cheese”. You can swap out the ham with bacon or sausage to better suit your family’s taste. I like to use the O’Brien hash browns because it already has the onions and peppers in it and thus saves me a step. But, if your family is not a fan of onions and peppers, just use the regular hash browns. The best thing about this casserole is that ALL, yes I said ALL my kids will eat it. My family likes to eat this casserole for dinner. Once you pull it out of the oven, just throw a little ketchup or fresh salsa on this baby and you will be in breakfast heaven! To bump this meal up another notch, try my Pumpkin Cinnamon Rolls with Caramel Frosting recipe. You will not be disappointed!

My Deep Dark Cinnamon Roll Secrets

Okay, my fellow culinary peeps. It is time to confess all my deep dark cinnamon roll secrets. I hope that you will find these useful in all your future cinnamon roll endeavers.

  1. I always use a baking pan with a rim on it. I don’t like to bake them on a cooking sheet. I don’t think they end up as soft and gooey if you use a cooking sheet.
  2. I personally think the best cinnamon with the best flavor is the cinnamon Costco sells. It is the Kirkland Signature brand. It is called Ground Saigon Cinnamon. It has a more pronounce flavor and smell than any other one I have used. If you don’t believe me….I dare you to test it out.
  3. I like to line the baking sheet with 2 to 3 sheets of tin foil. And then I spray the foil with baking spray. It makes for an easier clean up and for some reason when there is less clean up in the end the food always seems to taste better. Don’t you agree?
  4. To make sure that my rolls are as close in size as humanly possible. After I have rolled up the roll I cut it in half. Then I cut each half in half again. If I am doing my math right that will give you four sections. I then cut each section into three making a total of 12 cinnamon rolls. I have found this works best for me. Otherwise I end up with a bunch of assorted sized rolls and that just bugs me.
  5. I space my cinnamon rolls fairly close to each other in the pan. Again I like my rolls to be soft and gooey. I always space then about 1/2 inch to 1 inch apart. Then when they rise they should all be touching. Don’t freak out, it is much better this way!
  6. After I take the cinnamon rolls out of the oven I immediately frost them with the first stage of frosting. Yes, there is two stages to the frosting. Before you write me off as crazy, hear me out. When you frost them right out of the oven it will melt down through all the layers. Once they have cooled down I will add a little bit more to make sure those babies are properly covered. Don’t stress, you don’t have to add a ton the first go round. Just enough to ensure it can soak down through all the layers.
  7. I personally feel that  you can’t taste all the amazing bursts of flavor when the rolls are still hot. I know everybody loves a warm cinnamon roll. Trust me I do too! But just promise me that if you eat a warm cinnamon roll you will save one for later to enjoy after it has cooled down completely and all the  flavors have marinated together to make the most amazing cinnamon roll your mouth has ever consumed!

Hello, thanks for stopping by! I hope you enjoy this blog as much as I have enjoyed creating it.

Since I am practically inviting you into my kitchen, I thought it would be good if we got to know each other first. So please sit down and make yourself at home while I tell you a little about my culinary journey.

When I was little, I loved to watch people cook. My favorite TV show was The Frugal Gourmet on PBS. I could often be found sitting on a stool watching my mom cook and daydreaming about day that I too would be able to cook.

I started practicing my culinary skills in the backyard making mud pies. That didn’t last long of course because I could never convince anybody to eat them.

A few years later I entered my “experimental” stage in life. My BFF/ cousin Jack ( his name has been changed to protect the innocent) convinced me that his golden lab was in possession of some pretty tasty treats. Yes, ladies and gentlemen, you heard it right. We started snacking on the dog food. I was not a full on addict, however, I would snack on it in between meals. Then one bright and sunny day while we were soaking up the sun and enjoying each others company, the following happened. Jack reached his hand into the bag of dog food and it tipped over. The dog food started rolling down the steep driveway. Now, this driveway was not your average Joe driveway. Jack’s house sat up on a very large hill making the driveway pretty steep! At this point and time in my life I really was trying to cut back on the dog food, but that all quickly went out the window. Jack started grabbing handfuls of the nasty dog food and shoving them in his mouth. He then turned to me and ordered me to do the same before his Mom came home (his mom was not very happy about us consuming the dog food). So being the good friend that I was, I joined in.

Of course looking back now, I can see the best option would have been to simply put the dog food back in the bag. But hey, we were in shock and were not thinking clearly. We can’t be blamed for our actions.

After all evidence of any mischievous behavior had been consumed. I vowed to myself to only eat food that has been FDA approved for human consumption and I have never looked back.

I went on to conduct many experiments in the kitchen. One experiment included a little flour, water, a sauté pan, and a dream to invent the tastiest dish my family ever ate. However, you can imagine that warmed up paste isn’t very appetizing.

The day I had always dreamed of finally arrived when I was nine years old.  My dad agreed to let me make Kraft Mac and Cheese. He patiently read through the instructions and then stood by my side as I cooked. I knew the moment that the water started boiling that I was hooked!

This food loving culinary crazy girl continued over the years trying new recipes, creating recipes, and happily feeding anybody that would willing open their mouth.

In 2008 I was able to attend a Culinary Arts program at the MATC. It was there that I discovered that there was so much more to the culinary world than I had ever imagined. I learned a lot of new skills and fell even deeper in love with cooking (if that was even possible). I graduated from the program two years later.

If you haven’t figured it out yet, I love to cook. I am so excited to share with all of you my passion. I hope you enjoy all my tips, tricks, and recipes.
