Grilled Chicken Thai Salad And A Creamy Peanut Dressing

I am counting down the hours until dinner time so I can eat this scrumdiddlyumptious salad! I am not kidding you, it really is that good! My chicken has been marinating since lunch and all I have left to do is chop up the remaining ingredients and toss the salad together. This salad is chuck full of vegetables and has tons of flavor. After eating all the yummy but not so healthy food over the holidays, I know I need to get back on track with healthy food. If you think that healthy food is lacking in the flavor department, you will change your mind after one bite of this salad. You can also serve this salad as a side salad. Just omit the grilled chicken and walla, you have a tasty side to any entrée. Enjoy, because I know I sure will!

Hot Pizza Dip With Breadsticks

If you like pizza (who doesn’t) then you are going to love this dip. The great thing about this dip is that you get to customize it to your liking. You can add Canadian bacon and pineapple or pepperoni and onions. If you feel so inclinded you can even add anchovies. Pair this dip with these breadsticks, crackers, or pretzels and you will be the talk of the party (in a good way).

Breadsticks

My family loves these breadsticks! I got the recipe a few years ago from my husband’s cousin, Michelle. Over time I have tweaked it a bit (because I always do). I love to make these bread sticks to serve along side pasta or homemade pizza but don’t plan on having any left over because I guarantee you there won’t be any.

Olive Penguins

Come on, seriously how cute are these little guys? They would be the perfect little addition to any party, wedding reception, or bridal shower. They are simple to assemble and do not take a lot of ingredients. If you want to make a lot of these, I would suggest slicing and shaping the carrots a day ahead of time. Cover and refrigerate the carrots until you are ready to assemble the penguins. The assembled penguins can be stored in the refrigerator for up to two days if they are covered with plastic wrap.

Here are a few suggestions for you before you begin.

1. I use garden vegetable cream cheese. I personally think that the plain cream cheese is to bland. Any savory flavored cream cheese will work.

2. I like to use the carrot matchstick for the beaks. You can use the section of the carrot that you cut for the feet, but I found that it tore the olive and made a mess a lot of the time.

3. To pipe the cream cheese into the olives, use a zip lock bag and cut the tip of the bag. Be careful not to cut too much of the tip off. If you cut to much of the tip off, the olives will tear when you try pipe the cream cheese in.

Crank up your favorite music and let your creativity flow. Let the kids get involved and most importantly have fun!

I hope you all are enjoying this holiday season. With only two more days till Christmas, we are now in crunch mode. I finished the last of my Christmas shopping today. It sure feels good to be done! The only thing I have left to buy is the ingredients for our Christmas Eve dinner and our Christmas breakfast. My only problem is I am having a hard time narrowing down what I want to make. Easy Homemade Cinnamon Rolls are a family favorite! They are pillowy soft and fluffy with the gooey cinnamon sugar filling and cream cheese frosting produces nothing short of pure happiness. You won’t be able to eat just one of these cinnamon rolls, in fact, you might find that you want them all for yourself.

It is really cold and snowing outside. Do you know what goes really well with weather like this? Easy Homemade Cinnamon Rolls.

As you can imagine, I have the perfect cinnamon roll recipe for you. Generally, when I make treats, I save some for my family and take the rest out to extended family and friends. When I make these Easy Homemade Cinnamon Rolls, my husband doesn’t usually like me to share them with anybody.

Once they are out of the oven and frosted, they really don’t last very long anyway. I don’t know what it is, but there is just something about a  homemade cinnamon roll that warms my soul! After you eat one of these Easy Homemade Cinnamon Rolls, you will be smiling from ear to ear as you lick your fingers and reaching for a second one!

Easy Homemade Cinnamon Rolls

yields 2 dozen cinnamon rolls

Dough

2 Tbsp. yeast

1 c. instant potatoes

2/3 c. butter softened

1 ½ tsp. salt

1 1/2c. warm water

2/3 c. sugar

2 eggs

6 c. bread flour

Filling

1 cup packed brown sugar

2 tsp. Cinnamon

1/3 cup butter, melted

1/4 tsp. ground cloves

¼ tsp. allspice

Icing

1 stick of butter, softened

2 cup of powder sugar

¼ cup of cream cheese, softened

1 tsp. vanilla extract

1/8 tsp. salt

Directions:

Preheat the oven to 350 degrees

1. Dissolve yeast and sugar in warm water in a large bowl. Rehydrate the instant potato flakes w/1c. warm water and mix well.

2. Combine potatoes, butter, eggs, salt, and 3c. bread flour. Mix until smooth.

3. Mix remaining flour until the dough pulls away from the side of the bowl and it starts to form a ball. Turn dough onto lightly floured surface, knead until the dough is smooth, about 5 min. Place in greased bowl with greased plastic wrap on top of the dough. Let it rise in warm dry place until double in bulk.

4. Punch down dough and divide in half. Place one-half back into the greased bowl and cover with plastic wrap. With the other half, roll the dough out on a lightly floured surface. Until it is approximately 21 in. long and 16 in. wide. It should be about ¼ in. thick.

5. Spread softened buttered on the roll and sprinkle on filling. Tightly roll up lengthwise away from you. Cut the rolled dough in half. Then cut each half in half again. Cut each half into three equal pieces. You will end up with 12 rolls.

6. Spray two 9×13 inch pans with baking spray and place 12 rolls in each rolls in pan about half an inch apart. Repeat this process with the remaining dough.

6. Cover the rolls with a sheet of plastic wrap that has been sprayed with baking spray. Let rise until double in bulk.  Bake rolls for about 25-30 minutes or until golden brown.  Spread icing over hot cinnamon rolls.

Cream Cheese Frosting:

1. Cream the butter and cream cheese. Add the vanilla extract and salt and mix well.

2. Add powder sugar and mix it with an electric mixer until there are no more lumps and it is creamy.

*If the frosting is too thick, thin it down with 1 tbsp. of milk.

Fluffy Buttermilk Pancakes with Raspberry Maple Syrup

My kids would eat pancakes for all three meals if I let them. At my house we like to eat breakfast foods for dinner, after all, there is no reason to waste perfectly good food on just one meal a day… right?

I found this recipe on Allrecipe.com. It is a five-star recipe with 5,382 reviews. Come on, after seeing that many reviews, I had to try it! I must say, I was not disappointed! These pancakes are so fluffy and flavorful.  I did add an additional 1/4 cup of buttermilk. Otherwise the batter was too thick to pour onto the grill.

I also made some homemade raspberry maple syrup. I found this recipe in the America’s Test Kitchen Family Baking book. It is a given that any recipe from America’s Test Kitchen will be amazing!  I love that cookbook. If you like to bake from scratch you need this cookbook. It has everything from quick bread and muffins to custards, puddings, and souffles.

This syrup has a very fresh and vibrant raspberry flavor with a hint of maple. It is fabulous! Another great thing about this syrup is you can switch out the raspberries for any berry of your choice. It will keep for up to one month covered in the refrigerator. Just gently reheat before serving.

These pancakes and syrup would be perfect for breakfast on Christmas morning! Then again, they would be perfect for just about any meal that you want to please everybody who eats it.

Chocolate Orange cookies

Okay, I know I have said this before, but I love anything chocolate orange! Especially around the holidays.  I think the two flavors that come to my mind first when I think of Christmas is chocolate orange and chocolate peppermint. So naturally after realizing that, I didn’t have a chocolate orange cookie recipe I got to work in the kitchen and came up with one. I only add 1 tsp. of orange extract to the cookies. I like the mild orange flavor. I felt that any more was too overpowering. If you like a stronger orange flavor go ahead and add 1 & 1/2 tsp. of orange extract. You might want to make sure to hit the gym before you make these babies. I guarantee you won’t be able to eat just one. These cookies would be perfect for a cookie exchange, neighbor gift, or as a after school snack for the kiddos. After all, what better way to show somebody you love them than with a batch of chocolate orange cookies!

Maple Glazed Carrots

If you are looking for the perfect side to accompany your holiday dinner, look no further.  I was so excited when I stumbled across this recipe on the Little Dairy On The Prairie. These carrots will fool even the pickiest of eaters. In fact when I made these a few weeks ago, my older sister who said she hated cooked carrots loved them after only one bite. With only 5 ingredients and less than 30 minutes needed to create this scrumptious side dish, you really can’t go wrong.  So relax, your vegetable side dish for your Christmas dinner is covered. Now, go and enjoy the rest of your holiday season.

Blueberry and Feta Cheeseball

I needed a finger food for a party I was going to the other night. After taking inventory in my pantry and fridge and a hour of playing in the kitchen this is what I came up with. I used Craisins Blueberry Juice Infused Dried Cranberries. They can be found in any grocery store next to the original Craisins.

This cheese ball is very versatile. You can make mini cheese balls and serve them on a Ritz cracker or put a pretzel stick in the center of the ball. If you want to go a different route, try using it for the filling in a pin wheel. If you are more of the traditionalist, you can always stick with the classic cheese ball and serve it with crackers. Anyway that you choose to serve it or eat it,  it will be a hit!
