Peaches and Cream

At our house, we count down the days until peach season. There is nothing better than biting into a juicy peach! For as long as I can remember, my mom has made Peaches and Cream in the Fall time. She is kinda famous around here for her Peaches and Cream. Every time she is asked for the recipe, she laughs when they say “that’s it”? There really isn’t much to it, but boy is it amazing!

I like to make the Peaches and Cream and let it sit in the fridge for a few hours so the cream has time to thicken and the flavors can marinade.

I seriously wish I could see the look on your face when you taste it for the first time. I am not kidding when I say these Peaches and Cream are life changing!

Chocolate Cherry Brownies

Chocolate Cherry Brownies

 

I like my brownies very moist and chocolatey (if that is even a word). I like them to have enough flavor that they can stand on their own without frosting if they need to. However, I like frosting on my brownies but I don’t like it so sweet that it over powers the brownie and you get a instant headache from all the sugar.

I know, I know, I am kind of picky when it comes to my brownies. That is why I instantly fell in love with these brownies! They are every thing I have ever wanted in a brownie and more because you get the added bonus of the cherries. You can switch out the cherry preserves for another fruit preserve if you like. I think strawberry preserve or raspberry preserve would be fabulous.

The chocolate gaunche on these brownies is so silky smooth and it magically melts in your mouth with each bite.

Is your mouth watering yet? Mine is, so I am going to go because I have a brownie waiting for me. Dooda Lou!

What I Love Wednesday

If you look back over my recipes, you will see that I love to make cookies. Cookies are a great way to feed a crowd without having to slave away in the kitchen all day.  They generally don’t have to be refrigerated and they are easy to transport. What more could you ask for?

I wouldn’t want to be baking cookies in my kitchen with out my trusty cookie scoop. With this scoop, you can create cookies that are all the same shape and size with out getting your hands dirty.

Spinach Rice Balls

I don’t know what my deal is. Every time I make rice, I always have leftovers. I guess it is that when I am measuring the dry rice, it always seems like such a small amount that I start to second guess myself. I end up adding a little more rice and the end result is left over rice.

Elegant Lemon Roll

Elegant Lemon Roll. This cake screams summer and sunshine! It so refreshing and light it's hard to stop with just one slice. I am sucker for lemon desserts, and this is one of my favorite recipes!

My mom loves any food with a lemon flavor. So when I made this cake for the first time, I knew that if I shared some with her, it would quickly shoot me to top of the list on her favorite child list!

This cake is so moist and oh so delicious! It would be perfect for a bridal shower, baby shower, or any party that you wanted to impress your guests. It will show them how much you love them!

I have a lot of people in my life who I know would love this cake. I guess I better get to baking!

Garlic Roasted Edemame and Corn

Don’t you love it when eating healthy tastes good too! This recipe for Garlic Roasted Edemame and Corn is just that. I knew Alton Brown was on to something when I saw his recipe for Edemame Salad. I set out with every intention to make the salad. Once I pulled the roasted edemame and corn from the oven and tasted it hot, I decided to leave it as is. So instead of a salad we had the Garlic Roasted Edemame and Corn as a hot side dish.

Go ahead and give it a try, I have a feeling you will like it too!

2014 Yellowstone National Park Vacation

If you have never been to Yellowstone National Park, you are really missing out! Last week we went with my husband’s parents and some of his siblings and their families. We stayed for four days. I think next time we need to extend our stay by a day or two. There is just so much to see and do and it is hard to pack it all into a few days!

The first day we stopped in Jackson Hole and stayed in a camp just outside of Jackson. As we were on our way to the camp we saw a bunch of cars pulled over on the side of the road with a bunch of people taking pictures. If you have ever been to Yellowstone, you know that generally means that there is an animal some where around.

Of course we had to get out of our car to see what all the commotion was about. Much to our surprise, off in the trees was a moose with her baby. Keeping a safe distance, of course we took some pictures and were on our way.

BBQ Glazed Meatballs

Years ago, a man used to come into my mother in laws work and would bring these meatballs. He owned a local catering company and he was known for these amazing meatballs. My mother in law told me that he would have to sneak the meatballs into her and the other people in her department because all of their other co-workers would be mad if he didn’t bring any for them.

After he passed away, my mother in law ran into his wife one day and she asked if she could have the recipe for the meatballs. Boy am I glad that she did because these meatballs are fabulous!

10 minute Homemade Hot Fudge

A few years ago, my good friend Laura made this hot fudge for a youth church activity. Before I even had a chance to taste it, I saw some of the young men drinking it straight from a cup. I knew that it had to be amazing and that I better hurry and get some before all the youth devoured it. I wasn’t disappointed. In fact, I was half tempted to pour my self a cup as well.

 

Hot Fudge

 

This hot fudge is super easy to whip up and you can make it in less than 10 minutes. I will give you a fair warning. If you ever make this for others, you need to secretly set some aside for yourself. Every time I serve this hot fudge at a party, it quickly disappears!

My favorite way to eat this hot fudge is over a bowl of cookies and cream ice cream. Honestly, it doesn’t matter what you serve it over. Anything with this hot fudge over the top will instantly be amazing!
