Crock Pot Chili Cilantro and Lime Chicken Tacos

November 10, 2014 by myrecipeconfessions

I love a good crock pot meal! Isn’t it the best feeling when you are having one of those crazy days and you can take comfort in that dinner is already cooking in the crock pot?

This recipe is a fresh take on your average chicken taco recipe. The lime gives it a refreshing burst of flavor and the green chilies and cilantro helps balance the flavors out.

You can serve the Crock Pot Green Chili and Lime Chicken over flour tortillas, hard taco shells, or even in enchiladas. Top it off with your favorite toppings and enjoy!

Pin it, print it off, do whatever you need to do to add this recipe to your menu. You will be so glad you did!

With love from my kitchen to yours,

Carrie

Turkey and Stuffing Bake

November 8, 2014 by myrecipeconfessions

Turkey Stuffing bake is the best solution for leftover Thanksgiving turkey. This recipe rocks, my family loves this dish just as much as turkey on Thanksgiving.

What do you do with all the leftover Thanksgiving turkey and stuffing? Do you get a little overwhelmed with all that food? My mother in law makes a great dish with her leftover turkey and stuffing. She likes to use cream of chicken soup, but I like to make my own sauce.

How to Brine A Turkey

November 5, 2014 by myrecipeconfessions

How to Brine a Turkey. Trust me, you want to brine your turkey for Thanksgiving! This recipe is one of the most important recipe out of all your Thanksgiving dinner recipes. When you brine the turkey it is so moist and tender. Even the next day when you warm up leftovers, it is still just as moist as the first day. This recipe is very easy and I will never prepare a turkey another way!

Five years ago my life was forever changed when my wise cooking instructor Tony introduced me to the wonderful world of brined turkey. Brined turkey is extremely moist and loaded with flavor! The white meat is just as moist as the dark meat. Even when you warm up the left over turkey a few days later, it is still moist. Seriously, it’s magical!

I Am Thankful for Fall!

November 4, 2014 by myrecipeconfessions

The leaves have already changed colors and have been to falling to the ground. One of my favorite fall traditions is going for a drive up in the mountains to see all the fall colors. Last month Dave and I went up Payson Canyon for a picnic. The colors were absolutely stunning! Here are some of the pictures from our picnic.

Tomato Bacon Spinach Soup

October 27, 2014 by myrecipeconfessions

I first had this soup years ago at a cafe I use to work at. There was only one chef who knew how to make it right. The problem was that he didn’t really have a recipe for it. He just threw in a little bit of this and a little bit of that.

I loved it so much that I played around with the ingredients at home and made up my own version. I have been making this soup for years now. The great thing about this soup is that even the pickiest eaters love it! My four year who generally doesn’t like anything will always eat this soup. In fact, anytime I am making soup, my kids always ask “are you making my favorite soup“, meaning this soup.
