30 Minute Butterscotch Mousse

This 30 Minute Butterscotch Mousse blows all of the other mousse recipes out of the water! I mean come on who doesn’t love easy desserts? I promise when you make this heavenly dessert nobody will believe it took you only 30 minutes to whip it up!

This 30 Minute Butterscotch Mousse is for those days when you want a mouth-watering dessert but don’t want to spend all day in the kitchen making it. My kids love this mousse. Whenever I make it, I can always count on them hanging around and begging to have some.

This 30 Minute Butterscotch Mousse blows all of the other mousse recipes out of the water! I mean come on who doesn’t love easy desserts? I promise when you make this heavenly dessert nobody will believe it took you only 30 minutes to whip it up!

I like to make homemade whipped cream for the mousse but if you are crunched for time, you can use Cool Whip instead. Top this beautiful dessert off with a dollop of whip cream and you have a dessert that nobody is going to guess that it only took you 30 minutes to make.

This 30 Minute Butterscotch Mousse blows all of the other mousse recipes out of the water! I mean come on who doesn’t love easy desserts? I promise when you make this heavenly dessert nobody will believe it took you only 30 minutes to whip it up!

30 Minute Butterscotch Mousse

Makes 4 servings

1 (3.4oz.) pkg. of Instant butterscotch pudding

1 cup of cold water

1 can of sweetened condensed milk

2 1/2 cups of homemade whipped cream (recipe below) or cool whip

Instructions

  1. In a medium-sized bowl, whisk the pudding mix and cold water together until there are not any lumps. Mix in the sweetened condensed milk and cover and chill in the fridge for 5 minutes.
  2. Gently fold in the 2 cups of whipped cream or cool whip into the pudding mixture. Cover and chill in the fridge for another 20 minutes or until the mousse sets up.
  3. Spoon the mousse in small serving dishes. With the remaining ½ cup of whipped cream put a dollop on the top of each dessert. Chill until ready to serve.

 

Homemade Whipped Cream

1 pint of heavy whipped cream

¼ cup of granulated sugar

1 tsp. of vanilla

Instructions

  1. In a medium-sized bowl, whip all the ingredients together with a stand mixer until it forms stiff peaks.

30 MInute Raspberry Freezer Jam

This is a fail proof recipe for 30-minute Raspberry Freezer Jam. I know this because for years my jam has not set up right until now. This recipe does not call for corn syrup and it requires less sugar than most jam recipes. That is a total win for me! Trust me, you will not find an easier or tastier recipe than this one!

I grew up loving my grandma’s homemade raspberry freezer jam. I was in heaven with a slice of her homemade bread that had her raspberry freezer jam on it! A while back I started trying her method for making raspberry freezer jam. But for some reason, I could never get the jam to set up right. My mom and sisters always make their jam the same way as my grandma and they never have any problems with it setting up. I was beginning to get a freezer jam complex. I know there has to be something that I do wrong but I have not figure it out. The jam was still good but it is just not as thick.

This year I decided to try the Ball’s 30 Minute Jam recipe using their Real Fruit Instant Pectin. Seriously, this is the first year I think that my jam has set up properly. I love that this recipe calls for less sugar and there is not any corn syrup in it! I made a batch last week and pulled out the first bag of the frozen jam the other day. The jam was delicious! Remember this is only my first year making it this way so we will see how well it holds up in the freezer over time.

Roasted Beets with Balsamic Orange Glaze are one of those recipes that you really want to hang on to. Not only is it a healthy vegetarian recipe, it is also gluten-free. These beets are AMAZING!!! They are an easy side dish that everybody always rants and raves over.

I have always loved beets. My mom makes a few delicious salads with the beets as the star ingredient in the salad. When Dave and I got married, he wasn’t the biggest fan of beets. However, he has learned to love them as much as me.

Peanut Butter Cup Cookies

This Peanut Butter Cup Cookies recipe is the best one out there! They are so soft and chewy even a few days later. They are so dang addicting! They make the perfect dessert for any occasion.

Oh my,  these cookies are addicting! I ended up giving most of them away because I couldn’t stop eating them. My kids had a hard time keeping their hands off of them as well.  I am in love with how soft they are even a few days after you bake them. Sometimes peanut butter cookies can be kind of dry, but these cookies are the complete opposite.
