Fresh Peach Peach Pie tastes just like you are biting into a big juicy peach! The peaches are so vibrant and refreshing. Of course, the flaky pie crust and homemade whipped cream only add to the perfection of this pie! You will be surprised and how quickly this pie comes together. Making this Fresh Peach Pie is one of the best ways to enjoy the peach season!
There is a beautiful peach orchard that is about 15 minutes away from where I live. It sits up on the side of the mountain overlooking the whole valley. The view is breathtaking!
The past few years I have taken my kids and we pick enough peaches to fill a five-gallon bucket.
The peaches in the trees are so big and beautiful that I couldn’t resist snapping a few pictures of them.
I love how peaceful the orchard is. I was tempted to bring a book and hide under a peach tree and eat peaches all day while I read my book. My three year old however wouldn’t allow it. He was too excited to pull the buckets in his wagon back to the van.
Now I have a bunch of beautiful juicy peaches that are begging me to make something with them. Of course, I will eat my fair share of peaches just as they are. Fall would not be Fall without a few batches of peaches and cream and a peach cobbler or two. This year I tried my hand at Fresh Peach Pie. I had to make it a few times before I got the recipe right. I can’t wait for all you fellow peach lovers to try it out!
The hard thing about Fresh Peach Pie it that the peaches naturally have so much juice. The pie filling ends up pooling a little bit more than I like. The only thing that I found that helped with the extra juice is that after I tossed the peaches in the lemon juice, I placed them in a strainer in the sink. Using the strainer helped some of the excess juice drains before I mixed the peaches into the glaze. You will need to make sure that the glaze is completely cooled down before you mix the peaches in. Another key to a great peach pie is to make sure and allow enough time for the pie to set up in the refrigerator.
I love the fresh peach taste of this pie. The glaze enhances the fresh peach flavor even more. Then add your flaky pie crust and homemade whipped cream and you have a recipe that goes above and beyond everybody’s peach pie expectations!
With love from my kitchen to yours,
Carrie
Fresh Peach Pie
1 (9 in.) baked pie crust (you can find my favorite pie crust recipe here)
5 cups of fresh peaches, peeled, cored, and sliced
1 tbsp. of lemon juice
1 cup of water
4 tbsp. of cornstarch
1 cup of granulated sugar
1 tsp. of vanilla extract
Homemade Whipped Cream
1 1/2 cup of heavy cream
1/4 cup of sugar
1 tsp. vanilla extract
Instructions
1. In a bowl, gently toss the sliced peaches with the lemon juice. Place the peaches in a strainer in the sink to drain any excess juice. Combine 1 cup of sliced peaches and 2/3 cups of water in a medium-sized pan. Over medium-high heat, bring to a boil and simmer for 3 minutes. Mash the peaches with a wooden spoon and turn the heat down to medium-low heat.
2. In a bowl, mix the remaining 1/3 cup of water with the sugar and cornstarch. Whisk in sugar-cornstarch mixture into the hot peach mixture. Simmer the mixture for 3 to 4 minutes until thickened and translucent. Remove from heat and stir in the vanilla extract. Cool the peach glaze completely.
3. Gently toss the remaining peaches into the peach glaze. Pour the peach mixture into the pie crust. Place some plastic wrap over the pie and peaches. Place it in the fridge to set up for at least 2 hours.
4. Whip the heavy cream, sugar, and vanilla extract in a medium-sized bowl until it forms stiff peaks. Pipe the whipped cream onto the peach pie and serve.
