I always get in the mood for chili this time of year. This week I was taking dinner to my parents and I knew that they really like chili. I wanted to make them something different than the traditional chili. We love White Chicken Chili, but my mom doesn’t like chicken so I decided to switch the recipe up a bit. I love the results! My mom absolutely loved it too. Luckily we had left overs because it is just as good if not better the next day.
The Best Gourmet Chocolate Chip Cookies
I can’t say enough about these cookies! They are soft, chewy, and taste like the expensive chocolate chip cookies you buy at the bakery. Now you can make them at home for so much less. I am kinda picky about my chocolate chip cookies. I don’t like them dry or crumbly. I want the to have a chewy texture and a full flavor that is not too rich. I know that seems like a tall order but like I said before I am picky.

You can’t fully enjoy Autumn without a delicious apple dessert. Fall just wouldn’t be Fall without apples. I love a good freshly picked crisp apple. You might have noticed that I am kinda partial to apples and caramel. Last year I made 7 different batches of caramel apples before I got it just the way I wanted. Pumpkin Alfredo Sauce is a smooth and creamy sauce with a subtle sweetness of pumpkin that is rounded out by the sage and thyme. This sauce comes together very quickly. It is heavenly when served over cheese ravioli and sprinkled with toasted pecans and fresh parsley on top.
How to Make Your Own Pumpkin Pie Spice
I just discovered that I prefer to make my own pumpkin pie spice. I haven’t loved the store blends that I have bought at the store so I decided to venture out and make my own. I think that this Pumpkin Pie Spice blend is a lot more vibrant than the store version. I can tell a big difference in all of my recipes. When using this blend, you don’t need to adjust the measurements of recipes. Simply use the same amount as the recipe calls for.
The benefits of making your own pumpkin pie spice are:
- You can make smaller batches. Over time spices can go stale so making a smaller batch is better so that you can use it up before it looses its flavor.
- You can customize the blend to your liking. If you like more cinnamon in you blend or if you don’t like the ginger, then switch it up. You have total control over what goes into you blend.
- You will save money by making your own blend rather than buying a big jar of the store-bought blend if you already have all of the spices.
Of course, if you don’t want to make your own and prefer to use the store-bought blend, that is totally fine too. That is one of the many benefits of cooking from scratch, you can customize your food to your liking.

Pumpkin Pie Spice
2 tbsp. of cinnamon
2 tsp. of ground ginger
1/4 tsp. of mace
1/2 tsp. of nutmeg
1/8 tsp. of allspice
1/4 tsp. of ground cloves
Mix all the spices together and store in a Ziploc bag of small air tight container.
