What I Love Wednesdays

Today I want to share with you a product that I use A LOT in my kitchen. It is Better Than Bouillon.

Better than Bouillon is a concentrated stock base.

What is stock? “Stock is a flavorful liquid prepared by simmering meaty bones from meat or poultry, seafood, and/or vegetables in water with aromatics until the flavor, aroma, color, body and nutritive value are extended. The liquid is then used to prepare sauces, soups and as a braising and simmering cooking medium for vegetables and grain”. (The Professional Chef, The Culinary Institute Of America)

Although nothing will ever really compare to a perfectly made stock. Sadly, it isn’t always very realistic to make. I’m sure you are with me when I say I don’t generally have enough time to make stock and I certainly don’t have enough freezer space to store it. So, I do the next best thing. That for me has been using Better Than Bouillon. The flavor of this compared to a can of broth that you buy at the store is night and day. If you don’t believe me, I dare you to compare the two.  Whenever I open the Chicken Better Than Bouillon, it smells like homemade chicken noodle soup. The Beef base smells like a tender and juicy roast you just pulled out of the oven. I use the Turkey base on Thanksgiving. I like to brine my turkeys and because of this there isn’t a lot of juice that escapes the turkey. So I use as much of the juice I can get and use the turkey base to make up the difference.

It also is so much more cost-effective than buying the cans or boxes of broth. It only takes one teaspoon of the base for every cup of boiling water. From one 8 oz. jar of Better Than Bouillon you can get about nine and a half quarts of broth.

You can buy Better Than Bouillon at pretty much any grocery store. I like to buy it at Costco. They sell it in a larger jar and it is usually the same price as the grocery stores smaller jars. However, they only carry the chicken and beef base. So for all the other flavors, you will have to go to your local grocery store for those.

Better Than Bouillon comes in a wide variety of flavors such as, beef, chicken, vegetable, au Jus base, ham base, fish base, lobster base, mushroom base and turkey base. They also come in organic, reduced sodium, kosher, and vegetarian varieties.

I use Better Than Bouillon in all my soups and sauces. Give it a try. I know you are not going to be disappointed!

Grilled Pork Chops With Apple Chutney

I made this last night for dinner and man it was good! It is one of those dishes that really is simple and quick to throw together but I think a lot of people get intimidated by it. Trust me when I say you can do it, and you will love it! What is chutney you ask? Well Google describes it as a spicy condiment made of fruits or vegetables with vinegar, spices, and sugar, originating in India. I describe it as a freakin’ yummy salsa/relish like condiment that will blow your mind. I usually like to serve it with Pork or Chicken. But you really could pair it up with most meats. It can also be served with cream cheese and then spread over crackers. Or, add some mayo to the chutney and you have a sandwich spread. The possibilities really are endless. I think the Apple Chutney is perfect for fall time! You can serve the chutney chilled or hot right out of the pan. I personally like it hot over my meat. As far as the Pork chops go, I just grilled them and then served them with the Chutney over the top. Pineapple and Coconut Salad

I know I have mentioned many times that I love Fall. Today I have decided that I have a love/hate relationship with it. I love Fall for the cool crisp air and all the colorful leaves. I love that the kids are back in school and we are once again back on a regular schedule. I love Halloween and Thanksgiving and I love all the food that goes along with this amazing season.

Now, the thing that I absolutely hate about Fall is with the cooler weather comes sickness. My little boys always seem to get a runny nose and a cough. With sickness brings whining kids and sleepless nights. As a result of all of this, I end up sick as well.  Last week with in a matter of a few days we spent around a hundred dollars on doctors visits and medicine for my youngest. I would have much rather spent that money on a new outfit for my ever dwindling wardrobe!

So here I sit with my head all stuffy and my throat scratchy trying to get my boys to take a nap because they didn’t sleep well last night and I need some quiet time of my own. I am thinking about beaches and warm weather. I am wishing that I was somewhere far away sitting on a beach, reading a book, and enjoying the relaxing sound of the ocean waves as they lap against the shore.

Maybe for a day, I will take a break from all the pumpkin recipes and warm soups and pretend it is Summer again. Maybe, just maybe, if I try hard enough I can convince my body that it is still warm outside and therefore it is not time for my looming cold. I know it is a long shot. But hey, it is worth a try right?

Whether you want to join me in my little La La land visit is up to you. Either way, I suggest that you try this oh so refreshing salad. I use the word salad quite loosely because there are only too ingredients in it. You might even laugh a little when you see what this little “recipe” entails. But none the less it is amazing!

My mom made this for me a while ago. I had never had it before. Maybe the rest of you have and are wondering if I live under a rock somewhere. Regardless I love it, and everybody who tries it loves it as well. So here you go my friends. My little contribution to your imaginary paradise. Enjoy!

What Do You Do When You Have a Mouse Infestation? You Eat Them of Course!

I know, you are probably cringing right now after reading the title to this post. But, I accomplished my goal. I got your attention didn’t I?

I, like 99% of the women in the world can not handle mice. My mom is terrified of mice. If she saw one, she would jump on the nearest piece of furniture and scream/cry until somebody took care of the nasty little creature. If one of my siblings or I saw a mouse in the house (which luckily was very rare), we knew we had to immediately tell my dad.  He would then swear us to secrecy.  Then he would drop everything that he was doing to take care of the little creature. In the mean time all of the kids in the house were put on high alert. The mouse had to be caught before my mom found out, no questions asked! If my mom ever caught wind that there might be a mouse in our house she would threaten to move out and none of us would be able to rest until it was killed and properly disposed of.

However, when it comes to Halloween mice, they are welcome. That is of course unless they are real!  I believe that 99% of the women in the world will agree with me that there is never a place for mice! It is just one of those creatures that you wonder why they were ever placed on this earth. So let me rephrase the title of this post. What do you do when you have a chocolate mouse infestation? You eat them of course. Wow, that sounds so much better, don’t you agree?

These mice are actually quite cute and rather delicious! They are a great project for the kids to help with and they are always a hit at Halloween parties! My sweet sister-in-law Jill made these when David and I first got married. She made them for Christmas Eve and then read the Night Before Christmas. This of course, is another fun way to put your new little friends to good use. When you make these mice, you want to make sure that the maraschino cherries are completely dry. I take cherries out of the juice and set them on a paper towel until they are dry. You will also want to make sure that your kisses are unwrapped and you have selected the almonds for the ears. Because once the chocolate is melted, you have to work fast before it cools down again. I hope you and your family enjoy eating these mice as much as you will enjoy making them.

5 Ingredient Cheesy Ham and Potato Soup

I love this recipe especially on cold hectic days. It’s quick to whip up so on crazy days you can have dinner in no time. To make life even easier, I’ve included the crock pot version. This recipe is really easy to double when you are feeding a larger crowd. I always get compliments when I take this soup to parties. One added bonus about this recipe is that all my kids will eat it too. I always use the O’Brien hash browns because it has the onions and peppers in it but if your family doesn’t like onions and peppers, just use the regular hash browns. I also use freshly grated cheese. I don’t recommend using the pre-shredded cheese in a bag because it doesn’t seem to melt very well.  An immersion blender is the best tool to use when you are making soups or sauces! What I love Wednesdays

I thought I would dedicate my Wednesday posts to sharing with you all things that I love. I will be sharing anything and everything that I think that you might find useful or possibly love as much as I do. I have a bazillion different things that I think you might find useful. Please feel free to share with me the things that you love as well. So, lets begin.

I love my immersion blender. It is a hand held mixer that you immerse into a pot of soup, sauce, or what ever you need to blend. Then you just push the little button and whala your food is all blended up nice and pretty. So instead of ladling your soup or sauce into a blender or food processor and having it drip all down the sides of both the pot and the appliance, just use the hand held mixer.  A bonus is that you won’t have as many dishes to clean.

The little blender tip unscrews for easy clean up. I’m serious, you are going to think you have died and gone to kitchen appliance heaven! The price range is between $20 to $40 give or take a little. You can find them anywhere from Walmart to Bed Bath and Beyond. Most of the big Kitchen brands manufacture them as well. I always find myself in the kitchen making soups when the weather starts cooling down and the immersion blender makes it all that much eaiser to do that!  If you don’t have one, take my word for it, you need one! So go and get one and you will be thankful you did. I am not kidding, go now! Just kidding, you can at least wait until morning.

5 Ingredient Pumpkin Cookies

Pumpkin cookies and fall are a match made in heaven! I love pumpkin cookies and the more chocolate chips the better! But I always hated making them. Maybe I am wrong, but it always seemed like it took a million and a half ingredients to make them and then it made so many that I had them coming out my ears. So I very rarely made them. I just depended on my sister, Stephanie to make them for me. She would always make them when we had family gatherings and she became known as the pumpkin cookie queen in our family. Well that all changed for me about three years ago.

First of all, let me tell you that I like to make all my food from scratch. I never use mixes, canned soup, or anything else like that in my recipes. I just like the way that the food tastes when it is made from scratch. Now that being said, I do have three desserts that call for some sort of mix in the recipe. It basically comes down to  the fact that it would not taste the same without the mix  and I just figured, if you can’t beat them… join them. This, as I am sure you have already guessed, is one of the three recipes.

My cousin Erin made these pumpkin cookies for a party she was hosting and they tasted just like the cookies that my sister always made, but these took a lot less time and they made the perfect quantity too. So I asked her for the recipe and I have been making them ever since.

So, my friends, I am challenging you to do the same. I dare you to try this recipe and not fall in love with the intense flavor and the speedy process as well. I am willing to bet that you will do the same as I did and throw away that old recipe and add this one to the family cookbook!

Honey-Dill Carrots

We just got back from a visit to my sisters house in Henderson, Nevada (next to Las Vegas). My sister was so very kind to show us some awesome shopping spots. And even though we spent many dedicated hours in finding the best deals, I don’t think we even made a dent in the shopping down there. But we made some great memories and ate a lot of freakin’ yummy food! Yesterday we made the long cactus infested drive home. And along the way we had to stop at a fast food joint to fill our bellies. I don’t know about you, but every time I get back from a vacation I am so burnt out on eating out that I just want to eat healthy home cooked meals for  awhile. So, I thought I would share with the rest of you some of my faves. I am not sure where I got this recipe. So I can’t give credit where credit is due. But regardless, it is a good one.

I like this carrot recipe because it is quick to throw together. And the dill gives it a different twist on your typical sweetened carrot recipe. It is a great side to any meat and would make a perfect Thanksgiving veggie. I hope you enjoy it.

Grilled Chicken and Orange Salad with Orange Vinaigrette

I love fall! Every time fall comes around I get the baking itch. I know you know what I am talking about. This weekend I spent most of the weekend baking treats. We had a few family parties and I also took some treats to the neighbors. I might have had a few treats as well.  But, this morning when I got up and stepped onto my very unforgiving scale…let’s just say I went for a run.

This salad is perfect if you have fallen into the same funk that I have. It is light and refreshing and yet flavorful and satisfying at the same time. I think the orange vinaigrette adds a fun new pop of flavor.

So go ahead and eat some fall treats. But make this salad for dinner and enjoy this wonderful season with a little less guilt!

The dreaded P.E.C

I know you have all had an encounter with a P.E.C member. Some of you might deal with it on a daily basis. Others might be lucky enough to only have to deal with it every once in a while. And sadly, there might even be a few of you who you or your spouse are a member.

What is P.E.C you ask? P.E.C stands for, “Picky Eaters Club”. Every household has its own processes and routines for meals. In addition, each household member can differ from each other as far as what they will eat. Some households only have a few members while others might have a household full of card carrying members. No matter how may members you have in your home it is a very frustrating thing to deal with.

You might be wondering how you can tell if you have a P.E.C member in your home. Well, this can be a very tricky thing to identify. Because, they look just like the rest of us. The only real way to tell if you have a P.E.C member in your home is to feed them. If they refuse to eat, cry, throw themselves on the floor, or anything else that is not normal eating behavior. It is probably safe to say that indeed you do have a member in your house.

We were lucky with our first child. She ate pretty much anything that we fed her. Our second child started out good. He ate very well when he was a baby. However, over time he changed. I don’t know who introduced him to the club but by the time he was four he was a full fledge member.

My next two boys where a lot like my second child. They ate very well when they were babies but as they got older they too joined the club.

Now, my youngest is a totally different story. He is the President of the P.E.C at our house. And sadly to say, he is only eighteen months.

P.E.C members have different ways of reacting to the food placed before them. Our members have gone as far as throwing themselves on the floor and screaming to a full-on eating strike. To make matters worse, you never know when they are going to strike. There have been times at our house when I was making a meal that I thought everybody was going to like it because the last time I had made the same meal all of the members seemed to be happy with it. And then out of the blue, they decide that it is no longer something that they will consume. I have a P.E.C member at my house who will not eat any veggies. The only dairy product he will eat is string cheese (he won’t even eat ice cream). The only fruit he will eat is an apple. If I let him he would live off of chicken nuggets, chips, Little Caesars bread sticks, chips, Ritz crackers, and did I mention chips. Next, there is our president of the club who will be perfectly happy eating something one minute and then he’ll throw it on the ground and will scream for something else.

What is the proper way of dealing with a P.E.C member you ask? Well my husband and I have tried many different approaches to this matter. Some methods have worked for a little while and others have failed miserably! We have tried sending them to their room, making them go to bed early, setting a timer, and grounding them. I am even embarrassed to say that there have been times that we have just had one of those days and the last thing we wanted was to have to deal with their fits so we gave in and let them eat something else. I promise you this doesn’t work. If anything it just makes the problem worse. Because it shows them that you have a breaking point and they know that if they  push you far enough, they will get their way.

Lately my husband and I have decided that we are sick of playing their games. So we adopted the “We do not negotiate with P.E.C members” policy. Believe me it is very hard at first. There was a lot of crying and tantrum throwing but after a while, when they realized that we meant business they have started coming around. Now, granted my youngest is only eighteen months so he is a little bit harder to reason with. But even my pediatrician said that this was the approach we were going to have to take if we ever wanted them to get better.

It has been really rewarding to see the P.E.C members at my house discover that the food that they thought was disgusting before really is good. If they just try it, 98% of the time they really will like it. I understand that there are things that they will not like but they have to at least try it.

Another thing I would suggest is that you make sure that you and your spouse are on the same page with how you are going to approach this. Because if one of you is ready to go ahead with the no negotiating policy and the other is still sitting on the fence. Trust me when I say “it will never work”.

To all of my fellow foodies out there who are living with P.E.C members in their home. I just want to say…hang in there. It can be so frustrating and there might be times that you want to just give up. But remember, you need to stay strong and show them who is boss.
