About a month ago I went to a dinner with my friend Melanie from Fourtyeighteen. One of the sides to our meal was creamed corn. Now, the only kind of creamed corn I had ever had before was from a can and I was not a fan. This creamed corn on the other hand was out of this world! This creamed corn was so creamy and had a slight pink tint to it. With every spoonful I ate, I tried to figure out what spices they had used. Melanie and I both concluded that the pink tint had to be from paprika.
M and M Cookies
If I have a choice between a regular chocolate chip cookie and a M&M cookie, I will always go with the M&M cookies. Think about it, it’s a cookie and candy in one. Why wouldn’t you pick the M&M’s?
Grilled Pineapple and Avocado Salsa
I love fresh salsa! This salsa is loaded with flavor. I had a recipe written down for it at one time. Of course when I decided to make it a few weeks ago, I couldn’t find the recipe anywhere. So I had to come up with another one. I use mild green chilies because my family can not handle anything even remotely spicy. If you want to turn the heat up with this recipe, you can add jalapeno peppers or any other hot pepper that you want to burn your mouth with.
I also think this salsa would be amazing if served over grilled chicken or grilled pork chops. I am going to try that next time. This time, I just served it with tortilla chips.
After a day, the avocados get kinda mushy. It is really one of those recipes that is best to eat it the same day it is made. I’m doubt you will have any left over anyways. Because once you start eating this salsa, it is hard to stop!

Cheesy Corn Dip
Thanks to Pinterest and Juliaeatsandtreats, I became the coolest mom ever the night I made this dip. It is bursting with flavor and extremely addicting! I love how fast it is to make and that it is different than your average dip. You can serve it with tortilla chips, crackers or even pita chips.
Next time you need a dip for a party or to snack on with the family give this one a try.

Coconut Cream Cookies
When I saw this recipe on the I Want Crazy blog, it was love at first sight. Coconut cream pie is one of my favorite pies! So why not have coconut cream cookies?
I switched out the vanilla extract for coconut extract to boost the flavor even more. These cookies are moist and so loaded with the creamy coconut flavor. If you close your eyes while you eat one, you can almost feel the warm tropical sun on your face. This recipe is definitely a keeper!

Poor Mans Steak Sandwich
I have five kids and the older they get the more I am realizing that our schedules are getting busier and busier. Between school, dance, scouts, sports, and church activities, we generally have a couple things going each night. This of course takes a toll on dinner time. I am a strong believer in having dinner together as a family. Some nights our time is stretched so thin that I don’t always have a lot of time to prepare dinner before we have to leave.
If you have ever found yourself in this same situation, let me recommend the Poor Man’s Steak Sandwich. With only 7 ingredients (okay 8 if you count the bun) and less than 30 minutes, you can have this meal on the table. My kids downed it in no time and I felt better knowing they had a full stomach as they scurried off to their next event. Don’t waste your time in a fast food line, make the Poor Man’s Steak Sandwich and spend your time with your family eating around your dinner table.

4 Things You Might Not Know About Cinnamon
Who knew that cinnamon had such a rich and vast history? It was imported to Egypt as early as 2000 BC. It was used as a prized gift fit for monarchs and gods. The Greeks used it to flavor wine and the ancient Egyptians used cinnamon in the embalming process.
Baked Tamale Corn Cakes
About a month ago, my sisters and I went to Las Vegas to see O. We went down for the weekend and shopped and shopped and then we shopped some more. We had so much fun that we decided to make it a tradition that we do every year. While we were there, we stopped at the Cheesecake Factory for dinner. I don’t really remember what Entrée I ordered. All I remember is that it came with a side of tamale corn cakes. I was in heaven! I haven’t been able to get those tamale corn cakes out of my mind since. This is one of the recipes that I found, tried, and liked the most. I played around with a few other recipes and I will share them later. Give it a try and let me know what you think.

Spring Wreath
I started out on the path to make one wreath and I ended up making one completely different. I fell in love with Domestically Speaking classy Spring fever wreath. I knew it would look perfect on my front door.
So I bought all the supplies and began the grueling task of wrapping the jute around the wreath. I have made wreaths this same way before. Only I had used yarn and trust me, it takes a few hours. I loved the look of the jute so much, I knew I had to do it anyway.
I had to split the project up between two days because with two little ones at home with me, I am a bit short on free time. The first day I wrapped the wreath with the jute. The second day I made the coffee filter flowers. After playing around with the design of the flowers for a little while, I decided to go with a slightly different look than the Domestically Speaking flowers wreath.
I had to quickly run to JoAnns craft store to get the buttons for the center. I was so excited because I was so close to finally being done and being able to hang my beautiful wreath on my front door. As I was picking out the right buttons at Joann’s, I got a phone call from my daughter. She so lovingly informed me that my baby (he’s 2), broke my wreath into four pieces. I wanted to cry to say the least!
My sister who was with me suggested I use the straw wreaths instead of the styrafoam wreath I had used. She likes to use them because they are cheaper and they won’t break like my styrafoam wreath did.
I must say, I am very pleased with the results. I just wish I had known about them before I started so I would not have had to waste all that time. I guess I can chalk it up as another life lesson.
