Roasted Butternut Squash with Apple Cider Glaze

July 22, 2014 by myrecipeconfessions

Roasted Butternut Squash with Apple Cider Glaze makes an easy and delicious side dish for any meal. As soon as they come out of the oven I am tempted to start eating them. Anytime I make them for a party I get asked for the recipe. Serve them as a side for you Thanksgiving, Christmas, or Easter dinner for an unforgettable meal that everybody will love.

I am in love with butternut squash! I love the taste, the texture, and the color. When I was making this recipe, my kitchen smelled heavenly!

There is just something about the smell of apples and cinnamon that remind me of Fall time. But there is no need to wait until Fall to make this squash.

Double Chocolate Cherry Cookies

July 17, 2014 by myrecipeconfessions

I have had cherries on my mind for the past few weeks. We have a cherry tree in a field next to us that has pretty much been abandoned. My kids like to pick the cherries and have a cherry fights.

I thought to myself, what a shame it is to let all those delicious cherries go to waste. So that is when the idea for the Double Chocolate Cherry Cookies was born.

What I Love Wednesday

July 16, 2014 by myrecipeconfessions

It was a sad day when I used the last of my Mexican vanilla! I have been searching ever since for a vanilla extract to replace it. I was starting to think that I would never be able to find a replacement. However, last week I stumbled upon Nielsen-Massey Madagascar Bourbon Pure Vanilla Powder.Of course, I was very curious. The label on the back said is was ideal for dry mixes, beverages, and color sensitive recipes such as icing.

Mexican Fiesta Dip

July 14, 2014 by myrecipeconfessions

My sister in law made this dip for a Christmas party and it was love at first bite for me! I am warning you though, it is very addicting! You will not be able to dip just one chip and be done.

I think it tastes a lot like a 7-layer dip. However, it is a lot easier to make. It does make quite a bit, so plan on having a big bag of tortilla chips to go along with it.

It is one of those dips that you can quickly throw together in a pinch and it will still be the hit of the party! Don’t you just love those kind of recipes? I know I do!

Until next time,

Creamy Aqua Fresca Popsicles

July 9, 2014 by myrecipeconfessions

When it’s hot outside my kids beg for popsicle after  popsicle all day long.  The only problem is that popsicles are loaded with sugar and that is the last thing they need!

When I made these popsicles with  some leftover aqua fresca and low fat vanilla yogurt, I was thrilled when they begged for more!  Now when they come inside for the twentieth time asking for another popsicle, I don’t feel guilty giving them another one.

Watermelon Lemonade

July 8, 2014 by myrecipeconfessions

It is so hot outside right now! On days like today, one of the only things that helps beat the heat is a cool refreshing drink. Wouldn’t it be even better if that drink was not only refreshing but it was also healthy?

Well guess what, I have the drink for you. I developed this recipe for a segment I did on Utah’s KSL Studio 5. What I love so much about this drink is that it is made with only a few ingredients. The ingredients are watermelon, the juice from a few lemons, and a little bit of sugar.

The amount of sugar you add is entirely up to you. If your watermelon is a really ripe and sweet, you won’t have to add as much sugar. You can leave the sugar out completely for a sugar free drink.

Have you ever bought a watermelon at the store and then brought it home and cut it up only to discover that instead of read and juicy, it is pink, grainy and tastes like nothing? Instead of throwing it away and wasting your money, make this Watermelon Lemonade. It is the perfect solution for those not so ripe and tasteless watermelons.

A 12 to 14 lb. watermelon will make about 1 gallon of  lemonade. So next time you have a backyard barbecue, make this watermelon lemonade and instantly become the hostess of the year!

Until next time,

Carrie

Watermelon Cucumber Pineapple Aqua Fresca

July 8, 2014 by myrecipeconfessions

A few days ago I went for a run and on my way back I had to stop and pick up my daughter’s bike at her friends house. I don’t know if I am just out of shape or there is something up with her bike but I swear riding her bike a half mile home seemed harder than my run. My legs were on fire by the time I got home and I was completely out of breath. All I could think about on my way home was the watermelon cucumber pineapple aqua fresca I had at home in the fridge.

I’m sure you can guess that as soon as I walked in the door, I poured myself a glass of this heavenly drink and downed it before any of my kids could ask for some. This drink is so refreshing and thirst quenching! I really don’t know how else to describe it.

I developed the recipe for this drink as well as the watermelon lemonade for a TV segment on Utah’s KSL Studio 5. When the lovely host, Brooke Walker tried these drinks, she loved them!

After the show, Stephanie the show’s producer and the rest of the studio staff came over and tried some as well and they couldn’t get enough of it.

Trust me friends, you don’t want to let the cucumbers scare you away! When I tell people what is in the drink, they kind of give me a weird look when I say cucumber.  But once they try it, they love it.

My kids love it too ,and it makes me happy to know that they are drinking something that is good for them!

Until next time,

Carrie

Fiesta Corn

July 3, 2014 by myrecipeconfessions

A couple of my boys would be perfectly content if they could live off corn for the rest of their lives! They will eat corn from the can or frozen bag.  But their all time favorite is corn on the cob. Every time we pass a corn on the cob stand, my three year old begs me to stop and buy some for dinner.
