Autumn Harvest Salad with Creamy Pumpkin Dressing
4 cups of spinach leaves
3 cups of green leaf lettuce
1/2 cup of red onion, thinly sliced
1 cup of dried cranberries
1 cup of pecans, coarsely chopped
1/2 cup of feta cheese
1/4 cup of cilantro, chopped
3 cups of roasted butternut squash (recipe below)
creamy pumpkin dressing (recipe below)
Instructions
- Toss the spinach and green leaf lettuce together in a large bowl. Layer the roasted butternut squash, cranberries, pecans, feta cheese, red onions, and cilantro. Serve with creamy pumpkin dressing on the side.
Roasted Butternut Squash:
3 cups of butternut squash (about 1 to 1 1/2 lbs.)
1/2 tbsp. of olive oil
1 1/2 tsp. of kosher salt
1/2 tsp. rosemary
1/2 tsp. of ground sage
Instructions
Pre-heat oven to 400 degrees
- In a bowl, toss cubed squash in olive oil until well coated. Add the remaining spices and toss to coat.
- Spread the squash out on a baking sheet and bake for 20 minutes or until fork tender. Remove from oven and cool completely.
Creamy Pumpkin Dressing:
1/2 cup of pumpkin puree
1/2 cup of sour cream
2 tbsp. of olive oil
3 tbsp. of apple cider vinegar
3 tbsp. of honey
2 tbsp. of maple syrup
1/2 tsp. of salt
1/4 tsp. of nutmeg
1/4 tsp. of sage

- Add all the ingredients in a medium-sized bowl and whisk until smooth and creamy.
