Argentine Spinach Empanadas. These empanadas are Heavenly! Time spent in the kitchen making these empanadas is time well spent! These empanadas not only make great appetizers, they are a great vegetarian dish as well. The dough is flaky but not dry and the spinach filling is packed with flavor!

These Argentine Spinach Empanadas are a variation from the traditional Argentine empanada. My mom made them a few times when I was growing up. I have always loved spinach so of course I loved them. If you like empanadas, then you need to try these.

Homemade French Vanilla Ice Cream-This recipe is as fast and easy as they come. With an ice cream maker, you can eat your ice cream within 20 minutes. I love how smooth and creamy this ice cream is. It has the perfect rich French vanilla flavor. Another great thing about this recipe is that it doesn't have any eggs. This ice cream will rock your world!

I come from a long line of ice cream lovers. When I was little and my family and I would go visit my great grandma, she always offered us some ice cream. She always had Maple Nut and she served it in cake cones. I use to sit and anxiously await for her to offer us some of her prized Maple Nut ice cream. Just recently, I found out that she purposely waited until we were leaving to offer us ice cream so that we would stay longer. She was a smart lady!

Cheesy Bacon Ranch Dip

Cheesy Bacon Ranch Dip. This dip is my all-time favorite dip. It is super easy to make and there is rarely leftovers. Other recipes call for a long list of ingredients but this one only has 4 ingredients. It is one of the best appetizers for parties because it is gluten-free so everybody can enjoy it. I like to serve it with pretzels, crackers, or fresh veggies.

Every year for as long as I can remember, I have gone to the Christmas Craft Fair the day after Thanksgiving with my mom and sisters. I very rarely buy anything but I go because it is tradition. One of the booths that is always there is a vendor that sells dip mixes. They always have the dips out with pretzels for everybody to sample. My favorite has always been the dip with cheese, bacon, and ranch.

Summer and s’mores seem to go hand in hand. As much as I hate the big mess my kids make with s’mores, it seems like I would be depriving them of a critical childhood experience if I didn’t let them make the gooey mess. Every time we are up in the mountains camping, my 11 year old begs to make s’mores. The crazy thing is he doesn’t really like to eat them, he just likes starting the marshmallows on fire. I am sure you can imagine or relate to how s’mores can be.

My family looks forward to camping all year long. My kids love riding the horses, making forts in the trees, shooting their BB guns, and hanging out with their cousins. I love that my kids are entertained with activities that don’t involve electronics. We camp were there isn’t any cell phone service so I can really truly relax. I can sit back and read a book with out my kids interrupting every five minutes telling me they are bored.
