White Chocolate Peppermint Cookies are one of the best holiday cookies! They are soft and chewy with the perfect peppermint kick and the white chocolate is the perfect compliment. This recipe makes about 3 1/2 dozen cookies. So there will be plenty of cookies to share with your family or plenty to share at your next Christmas cookie exchange party.

White Chocolate Peppermint Cookies
1 cup of butter, softened
1 cup of granulated sugar
1 cup of brown sugar
1 egg, at room temperature
1 egg yolk, at room temperature
3 tbsp. of sour cream
2 tsp. of peppermint extract
3 1/2 cups of all-purpose flour
1 tsp. of baking soda
1/4 tsp. of salt
1 (10 oz.) pkg. of peppermint baking chips
1 (10 oz.) pkg. of white chocolate chips
Instructions
Pre-heat oven to 350 degrees
- Cream the butter and sugars together. Add the egg and egg yolk and continue to cream.
- Mix the sour cream, vanilla, and peppermint extract to the mix.
- Stir the remaining dry ingredients together in a separate bowl, mix the dry ingredients into the butter mixture until well combined.
- Fold the peppermint baking chips and the white chocolate chips into the cookie dough. Using a cookie scoop, scoop 1 tbsp. of cookie dough and roll into a ball. Place the cookie dough balls onto an ungreased cookie sheet. Bake for 12 to 15 minutes or until the bottoms of the cookies are a light golden brown.
