When I have ripe bananas sitting on my counter, this is my favorite recipe to make.
A few years ago, I found this recipe on allrecipes.com. The original recipe is for banana bread and it has 7,937 five-star reviews. Of course after seeing all the positive reviews I had to try it.
I use this recipe for banana bread or muffins. I added some vanilla extract to the recipe, as well as streusel on the top.
I love how moist these muffins are. They are still very moist even the next day..
These muffins are perfect for a grab and go breakfast or as a snack when the kids get home from school.

Banana Muffins with Strussel Topping
2 cups of all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup of butter
3/4 cup of brown sugar
2 eggs, beaten
2 1/3 cup of mashed bananas (about 5 bananas)
1 tsp. cinnamon
1 tsp. vanilla
Strussel Topping
1/4 cup of cold butter,
1/2 cup of all-purpose flour
1/2 cup of oats
1/4 cup of brown sugar
1/2 tsp. cinnamon
Directions
Preheat oven to 350 degrees
1. In a large bowl combine flour, salt, and baking soda. In another bowl cream the butter and sugar. Stir in eggs and mix well. Add mashed bananas, cinnamon, and vanilla and stir until mixed well.
2. Mix banana mixture into flour mixture; stir just to moisten. Pour batter into linen muffin pans. Fill each muffin cup 2/3 the way full.
3. Add the strussel ingredients in a bowl and mix until combined well. Sprinkle 1 tsp. of strussel topping on top of each muffin. Bake for 20 minutes or until golden brown and the top of the muffin springs back when touched.
