When it’s hot outside my kids beg for popsicle after popsicle all day long. The only problem is that popsicles are loaded with sugar and that is the last thing they need!
When I made these popsicles with some leftover aqua fresca and low fat vanilla yogurt, I was thrilled when they begged for more! Now when they come inside for the twentieth time asking for another popsicle, I don’t feel guilty giving them another one.
Not only are these popsicles refreshing and flavorful but they much healthier than the ones you buy in the store! You can’t go wrong with that combination.
Of course they aren’t just for kids. I promise you when you make these you will want to set a few aside for you as well!

Creamy Pineapple Cucumber Popsicles
Makes 6 popsicles
1 cup of pineapple cucumber water (recipe below)
1/2 cup of vanilla yogurt
1 to 2 tbsp. sugar (optional)
Instructions
1. Mix all the ingredients together until the sugar is completely dissolved. Pour the the liquid into the popsicle molds filling 3/4 of the way full.
2. Freeze for 4 to 6 hours or until they are completely frozen. Remove the popsicles from the molds by briefly placing the mold under running water.
Creamy Watermelon Pineapple Cucumber Popsicles
Makes 6 popsicles
1/2 cup of watermelon water (recipe below)
1/2 cup of pineapple cucumber water (recipe below)
1/2 cup of vanilla yogurt
1 to 2 tbsp. of sugar (optional)
Instructions
1. Mix all the ingredients together and stir until the sugar is completely dissolved. Pour into popsicle molds filling them 3/4 of the way full.

Watermelon Water
4 to 5 cups of watermelon, with rind cut off and cut into 1 to 2 inch cubes
1 cup of water
juice of 1 lemon
juice of 1 lime
1 tbsp. sugar (optional)
1. Blend 2 cups of watermelon with 1/2 cup of water. Strain the liquid through a strainer. Continue this process with the remaining watermelon. Stir in the lemon and lime juice and sugar until sugar is dissolved.
Pineapple Cucumber Water
2 to 3 lb. pineapple, with outer rind cut off and cut into 1 to 2 inch cubes
1 cucumber, peeled, seeded and cut into 1 to 2 inch cubes
1 to 1 1/2 cups of water
juice of 1 lemon
juice of 1 lime
1 to 2 tbsp. sugar (optional)
1. Blend 1 cup pineapple and 1 cup cucumber with 1/2 cup of water. Strain the liquid through a strainer. Continue this process with the remaining fruit. Stir in the lemon, lime juice, and sugar until the sugar is dissolved.
